Therefore, knowing how to avoid food poisoning during the holidays is essential to enjoy them without risks.\n\n\n<p class=\"wp-block-paragraph\"><strong>Abeer Bader, a nutritionist at <a href=\"https:\/\/www.massgeneralbrigham.org\/\" data-type=\"link\" data-id=\"https:\/\/www.massgeneralbrigham.org\/\" target=\"_blank\" rel=\"noopener\">Mass General Brigham<\/a>,<\/strong> shares five essential recommendations for celebrating safely and avoiding foodborne illnesses.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Clean surfaces and hands before cooking<\/strong><\/li>\n<\/ol>\n\n\nA clean kitchen doesn&#8217;t always mean a bacteria-free kitchen. This basic habit is the first defense for the prevention of food poisoning from spoiled food.\n\n\n<ol start=\"2\" class=\"wp-block-list\">\n<li><strong>Safely thaw meats and frozen products<\/strong><\/li>\n<\/ol>\n\n\nDuring December, it is common to prepare turkeys, legs, cold meats, and other products that require prior thawing.\n\nDoing it incorrectly favors the proliferation of bacteria that can cause food poisoning.<br>Bader explains three safe methods:\n\n\n<ol class=\"wp-block-list\">\n<li>In the refrigerator (ideal): always on the bottom shelf to avoid dripping on other foods.<\/li>\n\n\n\n<li>In cold water: changing the water every 30 minutes.<\/li>\n\n\n\n<li>In the microwave: only if it will be cooked immediately.<\/li>\n<\/ol>\n\n\n\u201cMany people put meat on the top shelf of the refrigerator, and if it drips, it can contaminate everything else,\u201d warns Bader.\n\n\n<ol start=\"3\" class=\"wp-block-list\">\n<li><strong>Avoid cross-contamination during preparation<\/strong><\/li>\n<\/ol>\n\n\nCross-contamination occurs when raw foods come into contact with ready-to-eat foods, a frequent cause of foodborne illnesses during the holidays. To reinforce food safety, the specialist recommends:\n\n\u2022 Use different cutting boards for meat and vegetables.\n\n\u2022 Wash hands and utensils after touching raw food.\n\n\u2022 Do not reuse plates where uncooked meat was.\n\n\u2022 Provide serving utensils for meetings or gatherings.\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\">&#8220;At parties, many people touch the food directly. Sometimes it&#8217;s enough for someone not to have washed their hands properly to contaminate a dish,&#8221; says Bader.<\/p>\n<\/blockquote>\n\n\n\n<ol start=\"4\" class=\"wp-block-list\">\n<li><strong>Cook food completely: the thermometer is your best ally<\/strong><br>Tasting cookie dough, consuming undercooked meats, or insufficiently heating seasonal dishes increases the risk of food poisoning caused by bacteria such as Salmonella or E. coli.<br>Bader recommends using a kitchen thermometer to check internal temperatures:<\/li>\n<\/ol>\n\n\n\u2022 Beef, pork, veal, or lamb: 145 \u00b0F \/ 62.7 \u00b0C\n\n\u2022 Fish: 145 \u00b0F \/ 62.7 \u00b0C\n\n\u2022 Ground meats: 160 \u00b0F \/ 71 \u00b0C\n\n\u2022 Chicken or turkey (including ground): 165 \u00b0F \/ 74 \u00b0C\n\n\u2022 Leftovers and stews: 165 \u00b0F \/ 74 \u00b0C\n\n&#8220;Using a thermometer isn&#8217;t just for chefs; it&#8217;s the safest way to know that a food is ready to eat,&#8221; says the nutritionist.\n\n\n<ol start=\"5\" class=\"wp-block-list\">\n<li><strong>Refrigerate on time and preserve food correctly<\/strong><\/li>\n<\/ol>\n\n\nThe classic December &#8220;reheated&#8221; food can also become a risk if food is stored for too long or left at room temperature for hours.<br>Bader underlines two key rules:\n\n\u2022 Nothing should remain outside the refrigerator for more than two hours.\n\n\u2022 Leftovers should be consumed within a maximum of 3 to 4 days.\n\n&#8220;Sometimes we rely on food that has been in the refrigerator for days. But, ideally, what will not be consumed soon should be frozen,&#8221; he warns.\n\nAlso, for those who bake, homemade cookie dough can last refrigerated for three to five days, or frozen for up to two months.\n\n\n<h3 class=\"wp-block-heading\"><strong>Celebrating safely is also an act of care<\/strong><\/h3>\n\n\nThe holiday season is a time to share, give thanks, and spend time with family.
