Constanza.- The Ecotourism Cluster of Constanza celebrated its 20th anniversary with an interesting gastronomic experience. Enchanted Valley of the Caribbean: identity in every bite”, bringing together actors from the tourism, academic and community sectors to connect with the essence of the destination. The activity takes place within the framework of a special celebration in the restaurant hall of the Pontificia Universidad Católica Madre y Maestra (PUCMM), Santiago campus, being conceived as a sensory journey where each bite told a story, where attendees could experience how gastronomy reflects the culture and agricultural richness of this fertile valley. The event began with words of welcome and invocation to God, followed by the intervention of Euclides Durán, acting president of the Cluster, who highlighted the path taken during these two decades and the importance of joint work for the sustainable development of the destination. Within the most significant moments, the recognition space stands out, in which posthumous tribute was paid to Don Juan Marún Tactuk (Johnny), for his invaluable legacy to the tourism development of Constanza. Likewise, former presidents Rafael Collado Abreu, founding president; David Matías Meléndez; Vienchy Rodríguez; and Plácido Rosa, were recognized for their leadership and commitment to institutional strengthening and the positioning of Constanza as a tourist destination. Students from the School of Hotel and Tourism of PUCMM were responsible for creating a wonderful experience by transforming local ingredients into a true culinary story. Each preparation connected the attendees with the history of Constanza: the resilience of the crops that sustained the country in difficult times, the agricultural diversity that combines with European and Japanese influences, and the tradition that reinvents itself in each bite. “Each dish is a piece of history”, “the everyday can be transformed into the extraordinary” and “everything that comes to Constanza flourishes” were some of the messages that accompanied the tasting.

The event culminated with words of thanks from Rafael Collado, founding president of the Cluster, who acknowledged the students’ effort and reaffirmed the commitment to continue promoting the tourism development of Constanza. The Ecotourism Cluster of Constanza reaffirms the mission of promoting sustainable tourism, based on local identity, community participation, and the articulation of strategic allies, projecting Constanza as a unique mountain destination.
