Villa Mella, culture and gastronomy in a new episode of “Sabor de la Calle”

Santo Domingo.- The digital program “Sabor de la Calle”, directed by journalist Cristian Santana, presented an episode dedicated to Villa Mella, in Santo Domingo Norte, highlighting the local gastronomy and the cultural tradition of the Cofradía del Espíritu Santo. The report explores the preparation process of chicharrón, an emblematic product of the area, through testimonies from producers and owners of fry shops with decades of experience. One of them, known as “Apechao”, narrated the evolution of the cooking technique, from the use of large cauldrons to current methods, highlighting the importance of this practice in his family life. The tour also included a visit to an establishment with more than thirty years of service, where the opening hours and the composition of the traditional guasacaca were explained. In addition to pork rinds, the offer includes fried sweet potato, cod fritters, casabe, jaw, blood sausage, ears with dough, bofe, tongue, snout, tripe, luche and longaniza.

In the cultural sphere, the episode features the Cofradía del Espíritu Santo, the group responsible for keeping the tradition of the Congos alive, an expression declared World Heritage by UNESCO. Its representative explained the role of the 16 members who sing, play, and dance during funerals and commemorative acts, highlighting the generational transmission of this practice.
